
I love to cook and I love to eat, but there are days that I just don’t feel like being in the kitchen. Every once in a while, the thought of standing at the stove is like nails on a chalkboard. Yes, even for someone that loves fresh ingredients.
I have spent many hours scrolling through recipes and blog posts from the most amazing vegan and whole food plant-based chefs and I can tell you that I have caught myself just drooling over some of the recipes. The photographs make me want to run out and buy the ingredients and recreate what I just saw…
In the normal everyday grind of family and kids and dogs and horses and rodeos and dance lessons and self care, there are not too many people that can cook gourmet plant-based meals using special care to place beautiful edible flowers along the top for the most amazing (scratch and sniff) photographs.
Yesterday was one of those days for me. I just didn’t have the desire to spend hours in the kitchen and so like so often in my life, I rely on the staples in the pantry. The Grey Ghost Chili that I created was only 3 chopped ingredients and the rest was a can opener along with a crock pot. AWWWW – a night to sit on the sofa and just relax a bit.
This amazing chili that I made took me about 10 minutes total – chopping and opening cans. A few seconds to stir and dinner was ready several hours later.
The items I took the time to chop – 1 large onion, 3 cloves of garlic and a small grey ghost squash. I opened a can of black beans, dark red kidneys and pintos and rinsed them. I tossed all this into the crock pot and opened a can of diced tomatoes and a can of tomato sauce to add to the mix. Finally I sprinkled in some spices. I would love to tell you how much, but I don’t have a clue. I just opened the spice cabinet, opened the jars and started sprinkling in some cumin, chili powder, onion powder and garlic powder.
I left the crock pot on low for about 7 hours and dinner was ready before we loaded up the horses and dog and headed to the rodeo grounds. 🙂
