
Easy and simple meals are needed — OFTEN! I see beautiful pictures of food all over the internet and I try my best to post them also, but sometimes, It needs to just be a plate full of grab and go. This black bean burger is one that I fall back on so many times. It is so good.
Ingredients:
1 1/2 cups rolled oats — I use gluten free
15 oz can black beans – rinsed and well drained
3/4 cup salsa or taco sauce – make sure to pick one with little to no added sugar and the lowest amount of sodium
1 tbsp tamari – soy sauce if vegan is not high priority
1 1/4 tsp mild chili powder
1/4 tsp chipotle chili
1/2 tsp garlic powder
1/2 cup corn — I just pop open a can and drain
Place oats into a food processor with S blade first to grind slightly — 5 – 10 pulses
Add all the other ingredients except corn and blend until everything looks well blended. Once done, mix in corn with a spoon.
Preheat oven to 375F and line a baking sheet with parchment paper. Form 6 patties and bake for 20 minutes. Turn all patties over and return to the oven for 10 more minutes. Place on a bun or bread or just a bed of lettuce. Top with all the veggies you love and eat.
