Black Bean Dark Chocolate Macadamia nut Brownies – Vegan

INGREDIENTS

  • 2 tbsp ground ground flax + 6 tbsp water
  • 1.5 cup black beans (15oz can black beans rinsed and drained)
  • ½ cup Peanut Butter
  • 1/3 cup Dark Cocoa Powder
  • ½ cup coconut sugar
  • 1 tsp vanilla
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup chopped macadamia nuts – or other nuts of choice

Optional toppings – coconut cream, fruit, flaky salt


INSTRUCTIONS

  1. Pre-heat oven to 350 F
  2. Grease or line a 8 x 8  inch baking tin 
  3. Add all the ingredient except the dark chocolate and nuts into a food processor and blend until combined and smooth. Scrape down the sides of the food processor as needed. 
  4. Add in the chopped chocolate and pulse blend a couple times to incorporate the chocolate into the batter. 
  5. Mix in any nuts
  6. Transfer brownie batter into baking pan. Using a spatula, smooth out the top. 
  7. Bake for 30 minutes. Allow it to cool for 15 minutes before removing from baking pan. Place on cooling rack and cut into sliced when completely cooled.
