Lentil Sloppy Joe’s

Ingredents:

1 Cup Lentils

3 Cups Water

1 tsp Sea Salt

1 Large Onion Diced

1 Bell Pepper (any color) cored and diced

2 Large Garlic Cloves minced

2 ½ Tbs Chili Powder

1 ½ tsp Smoked Paprika

3 Tbs Tomato Paste

1 ½ Cup Tomato Sauce (1 can)

1 Tbs Pickle Juice

2 tsp Vegan Worcestershire Sauce

3 Tbs Yellow Mustard

2 – 3 Tbs Pure Mable Syrup

Directions:

In a saucepan, cook lentils in water and 1/8 tsp of Salt for 20 minutes

While Lentils are cooking, sauté onion using water or vegetable broth to keep from sticking.  After 5 minutes, add garlic and bell pepper and cook for additional 10 minutes until soft.  

Add dry spice to vegetables and stir well to coat and then add all remaining ingredients and heat for approximately 5 minutes to bring all flavors together.

In a large bowl or the saucepan, combine vegetable mixture with the lentil and stir.

Serve on buns or bread! – So good and so healthy
