Chickpea salad

INGREDIENTS:

1  Can chickpeas (garbanzo beans)

¼  Red onion – chopped

2 Stalks celery – chopped

½ Apple cored and diced

1 Avocado – mashed

Walnuts (optional)

Heat chickpeas on stovetop or in microwave for a couple minutes so they are soft for mashing

Drain and rinse chickpeas in cool water

Mash chickpeas and combine with onion, celery, apple and walnuts

Mash avocado in separate bowl and then combine with other ingredients.  

Spread chickpea salad onto whole grain bread or crackers.  Top with microgreens, carrots, bell pepper or other veggies (optional)
