Celery root & apple salad – oil free, gluten free

Ingredients:

1 Medium Celery Root

2 Apples – I used Fiji

2 Tbsp Lemon Juice

1 Tbsp Dijon Mustard

4 Tbsp White Balsamic Vinegar

¼ tsp salt

1 Tbsp Capers – drained and rinsed

1-2 Tbsp chopped fresh Dill

Directions: 

1.  Chop celery Root and apples and put in bowl and massage with Lemon Juice to keep from turning brown

2.  Mix together Dijon, Balsamic, salt, caper, and dill.  Mix until well blended and pour over celery root and apples
