Split Pea & Kale Soup

INGREDIENTS: 

1 lbs rinsed dried split peas

2 Carrots chopped

5 Celery ribs chopped

1 Small Onion diced

2 Cloves garlic minced

7 Cups Vegetable broth

2 handfuls of chopped kale – any variety

1 dry or fresh bay leaf

DIRECTIONS:

Combine all ingredients in a large crockpot

Turn on crockpot for approximately 6 – 8 hours

Stir every hour or so.  Soup will be ready when split peas are soft. Remove bay leaf and serve
