Mashed Parsnip, Turnip, and Carrot – Dairy Free, Oil Free, Gluten Free

Ingredients:

1 Medium Turnip (approximately 1 cup chopped)

2 Medium Parsnips (approximately 1 cup chopped)

2 Medium Yellow Carrots – Any color can be used, but I wanted to keep the color of the mash

2 Cloves Garlic

½ medium Leek

Sea Salt to taste

Pepper to taste

Optional dried chives

Optional fresh horseradish

Directions:

Peel and chop turnip, parsnips, carrots, leeks, and garlic and put into saucepan with water or vegetable broth.

Boil vegetables until soft enough to mash with potato masher

Mash together until desired texture – I like mine similar to mashed potato

Add salt and pepper to taste and optional dried chives and fresh horseradish
