
I am always trying to come up with great oil-free dressings. Today, treat yourself to this amazing Sun-dried Tomato Vinaigrette. Vegan, Oil-free, nut-free dressings don’t always taste great, but here is one you will love! So easy and so healthy!
Ingredients:
2 cloves Black Garlic (regular garlic can be used)
3 Large sun-dried tomatoes
1 tbsp Dijon Mustard
¼ cup White balsamic vinegar
¾ tsp Italian seasoning blend
¼ tsp sea salt
¼ tsp black pepper
1 cup water
Directions:
Soak sun-dried tomatoes in 1 cup of water for approximately 20 minutes. Including the water from the soaking tomato, Combine all additional ingredients into a food processor or blender. Blend until tomato and garlic are completely chopped. ENJOY over salad or veggies. Serve right away or store in the refrigerator for use over the next couple days.
