Vegan Gluten Free Apple Crisp

I love the scent of fall in my home! Apples, cinnamon, vanilla and maple. I was blessed to receive a big box of fresh picked golden delicious apples from some friends this weekend and I couldn’t wait to start baking with them.

Ingredients

6 small apples – thinly sliced

1 1/2 cups of gluten free oats

1/2 cup chopped pecans (or nut of choice)

4 tbsp cashew butter (or nut butter of choice)

4 tbsp plant based milk

2 tbsp pure maple syrup

1 tbsp lemon juice

1 tsp Cinnamon

1 tsp Apple Pie or Pumpkin Pie Spice

1 pinch Salt

Directions

Start by cleaning and slicing Apples into thin slices (I like to leave the skin on, but that is optional) and place into a mixing bowl. Preheat oven to 375. Add Lemon Juice, 1/2 of the Cinnamon and Maple Syrup and mix together. Add mixture to pie pan and set aside.

In a mixing bowl, combine the balance of the ingredients and smash together with a fork until crumbly and slightly sticky from the nut butter and then spoon onto the top of the Apples. The Apples do not need to be completely covered, but as much as possible.

Bake for approximately 45 minutes or until Apples are desired texture. Enjoy this warm with some coconut cream or some Vanilla Nice Cream.
