Quinoa and Sweet Potato Patties – Healthy, Vegan & Gluten Free

Ingredients

  • 1/2 cup Kale finely chopped
  • 2 cups Baked Sweet Potato around 2 sweet potatoes
  • 2 cups quinoa cooked
  • 1 tsp thyme dried
  • 3 Cloves garlic
  • fresh cracked pepper
  • salt to taste
  • 1 Tablespoon Olive Oil or oil of preference

Instructions

Prep

  1. Bake the sweet potatoes in the oven for about 60 minutes depending on size. Peel and discard the skin. Mash the sweet potato.
  2. Cook 1 cup of quinoa as per packet instructions. I cooked it in my instant pot for 10 minutes with 2 cups of water and allowed the slow release.

Cooking

  1. In a bowl, add the mashed sweet potato, cooked quinoa, chopped kale, dried thyme, and garlic. Season with salt and pepper. Mix everything together.
  2. Take about 2 Tablespoons of the mixture and form into patties.
  3. Heat a non-stick pan. Add a teaspoon of oil. Cook the patties 2 minutes per side until they are crisp and golden brown.
